Koyla karahi biryani:
Ingredients:
Chicken ½ kg
Yogurt 2 tbsp
Tomatoes ½ kg
Green chilies 8-10
Clarified butter ¾ cup
Chaat masala 1 tbsp
Lemon juice 4 tbsp
Coal 1
Ginger garlic paste 1 tbsp
Salt to taste
Red chili powder 1-1/2 tsp
Turmeric ¼ tsp
Green coriander ½ bunch
Ingredient for Rice:
Rice ½ kg
Salt to taste
Mix all spice 1 tbsp
Screw pine essence few drops
Yellow food color 2 pinches
Milk 4 tbsp
Clarified butter 4 tbsp
Method:
Marinate chicken with yogurt. Add tomatoes, ginger garlic paste, salt, red chili powder, turmeric and ½ cup of water cook till done. Add chicken fry well. Add green chilies, chaat masala, lemon juice and green coriander. Apply smoke of coal and left for five minute. Boiled rice with salt, screwpine essence and allspice powder and sieve it. heat oil add half water and rice. Add chicken mixture and remaining rice with milk (dissolve yellow food color) mix well. Add remaining ghee on rice left for simmer and serve after dish out.

Khoya Halwa:
Ingredients:
Semolina 1 cup
Gram flour ½ cup
Whole dried milk ¾ cup
Sugar 3 cup
Clarified butter 1 cup
Yellow color 1 pinch
Cardamom 4-5
Mix dry fruit as required
Sterling silver leaf 1
Screwpine essence 3-4 drops
Method
Add 2 cup water, yellow food color and 2 cardamom in sugar and cook on low flame till sugar dissolves. Sauté semolina and gram flour separately. Then add in sugar syrup mix well and cook on high flame. When boil comes then leave on dum. When semolina gets done then add Whole dried milk mix dry fruit and screwpine essence. Now take out in dish put sterling silver leave and serve.
